About This Coffee

This tradional, well known process of wetmill preparation, we processes exclusively Arabica Red Bourbon, a variety celebrated for its distinctive sweetness and complex acidity. Quality is assured through a meticulous, multi-stage process:

1. Selective Harvesting & Intake

Farmers deliver selectively picked, ripe cherries within 8 hours of harvest. Upon delivery, cherries are floated to remove defects, and farmers receive immediate payment. Farmers are paid by cash through site collectors who are reimbursed in next day, or through banks later.

2. Sorting & Processing

A density sorter machine, nicknamed “The Policeman,” efficiently removes light or defective beans at reception. The high-density cherries are then depulped and undergo a 12-hour dry fermentation.

3. Washing & Grading

After fermentation, the coffee is washed and graded in long channels into three categories: Grade A (specialty), Grade B (commercial), and Grade C (sold locally).

4. Pre-Drying & Drying

In a critical quality control step, the wet parchment is shade-sorted for up to four hours to remove any remaining defects. It is then slowly sun-dried on African raised beds for approximately 20 days.

5. Storage

The store is well aerated, and the coffee is laid on pallets, far from wall to avoid any contact with humidity. Humidity is checked regularly and coffee lots are cupped by Dukunde Kawa Cupper along with the Q-graders of our exporting partner, RWASHOSCCO.

6. Dry Milling

At milling factory, the coffee is carefully milled by different machinery, including pre-cleaning machinery, Destoner that remove stones and Catador in cleaning of coffee after the hulling of coffee. this machine is used in removal of light, broken, bits, and other impurities. The coffee pass on size grader where screen 15+ are collected and then coffee is sorted on vibrating gravity table that sorts coffee by density. Later, it passes through color sorter machine that removes bad quality coffee and any defects based on color with accuracy of 95%. The coffee is then sorted by hands by experienced seasonal women workers where they remove broken beans, damaged by pests and some greenish beans. Prior to shipment, the coffee lots are mixed in lager coffee bulking machine to ensure the homogeneity of the lot in container.

This careful approach, combined with Rainforest Alliance and Fair Trade certification, ensures a clean, consistent, and high-quality cup that reflects a commitment to both exceptional flavor and sustainable practices.
